RECIPE: Easy Sugar Bunny Cookies

Keep the kids occupied with this sweet afternoon project. They can have fun decorating these easy. Why not experiment with different shapes and flavours, from gingerbread fingers to chocolate cookies too.

These super-easy adorable bunny biscuits will hop off the plate faster than you can bake them.

Ingredients

  • 400g plain flour

  • 200g unsalted butter, softened

  • 200g caster sugar

  • 1 large egg

  • ½ tsp vanilla extract

  • ½ tsp salt

You will need

1 x bunny shaped cookie cutter


Instructions

  1. Heat the oven to 200C/180C fan/gas 6 and line a baking sheet with baking parchment.

  2. Put the butter in a bowl and beat it until soft and creamy. Beat in the sugar, then the egg, salt and vanilla, and finally the flour to make a dough. If the dough is very soft, chill for 45 minutes.

  3. Cut out the biscuit into bunny shapes using the biscuit cutter (or any shapes you like; or even use the rim of a small glass and peel away the leftover dough around the edges). Re-roll off-cuts and repeat.

  4. Transfer the individual biscuits to the baking sheet and bake for 8-10 mins or until the edges are just brown. Leave to cool for 5 mins, then have fun decorating to however you like! Storage: Place them in an airtight container for up to 3 days.
